Raw honey will quickly crystallize when too cool, so keep it in a warmer place if you’re not going to use it fast.

Q & A: Why does it crystallize?
Because of the benifitial small amounts of pollen and other compounds known as propolis. This is what makes raw honey special, but it also causes the sugars to form bonds together. Simply warm it up in a container of warm water to make it more pourable again.
